Matt began his culinary career in the Islands working for Duke’s Waikiki. Matt joined the Hula Grill Waikiki culinary team in 2011, with hopes to foster the Farm to Table movement, focusing on local products and sustainable practices. Chef Matt is able to participate in many community outreach programs including the Kokua Foundation, Hawaii Culinary Education Federation, Localicious Campaign, Kids Cooking Local, Hawaii Food and Wine Festival, Sustainable Coastlines, Access Surf and Aina in Schools program. After Chef Matts tenure at Hula Grill Waikiki he has transitioned back to Dukes Waikiki in 2020 to assist in navigating Dukes through the uncharted water of operating a restaurant during a pandemic.
With over 20 years of culinary experience, Paul Rivera is the up and coming Executive Chef at Hula Grill Waikiki. Paul has been with TS Restaurants since 2006 working both at Dukes Waikiki & Hula Grill Waikiki, where he is excited to be able to creatively blend and expand the skills he has learned to craft exquisite dishes that highlight the flavors of the islands.
In 2000, Chef Shaymus made a move to the island of O‘ahu and joined Chai’s Island Bistro. After holding an executive chef position at Bistro Catering where he often served over 1,000 guests at events, Alwin joined the culinary team at The Royal Hawaiian, a Luxury Collection Resort, Waikiki. During his time there, Alwin received the “Best overall TASTE” Award in 2016 and the “Best Use of Ingredients” Award in 2017 at the Hawaii Food Manufacturer Association Cook Off. He is a 10-time award winner of Honolulu Magazine Hale Aina Award in Best Farm to Table and Best Seafood categories. Currently, Alwin is the Executive Chef of all G.Lion Hawaii culinary concepts at The Ritz-Carlton Residences, Waikiki Beach.
Chef Ron de Guzman has found a way to create a menu which reflects the melting pot of ethnicities in Hawaii. With the help of local farmers producing great local ingredients he writes menus that showcase these ingredients, twisting them with flavors indigenous to Hawaii. This results in our ‘World Inspired, Local Comfort’ cuisine. He delivers this cuisine in two different ways – Amuse Wine Bar is a more casual atmosphere, perfect for pupus and drinks. We offer a great selection of wines by the glass, perfect for wine tasting or pairing with your favorite dish. In Stage, we execute a fine dining menu, where the dishes truly are the show.
