Take the elevator to Ala Moana Hotel’s 36th floor, and the ride alone will have you buzzing in anticipation of what’s to come.
As the doors open to a grand foyer, take a moment to simply savor the grandeur of Signature Prime Steak and Seafood.
Chandeliers glisten in afternoon sunlight and stunning views of nearly every corner of the island are accessible from any seat in the restaurant.
This is what indulgence is all about. And, when it comes to pleasing appetites, Signature delivers a menu with tantalizing cuts of meat and seafood.
One of the restaurant’s most popular items is Prime Bone-In Rib Eye ($55.95), a generous 22-ounce portion wet-aged for 28 days. Before the savory steak is served, it is broiled. Wet-aging the meat and leaving the bone in enhances the marbling of the meat, which in turn heightens its flavor.
With 10 different side dishes to choose from, Lobster Mac and Cheese ($19.95) is certainly one of the most indulgent. Chef Glenn Nitta prepares lobster cream using live Maine lobster to create the sauce, and adds a touch of white wine, spices and other herbs, before allowing it to simmer. For each order, macaroni, Parmesan and Swiss cheese, and lobster are added before being topped with bread crumbs.
As the grand finale, Signature’s Chocolate Souffle ($13) is every chocolate lover’s idea of decadence.
The souffle surrounds a center of molten chocolate and is served with vanilla bean gelatto.
“It’s a little more dense than your typical, classical souffle, which is more airy,” Nitta says. “This one is a little more rich.”
To add to the ambiance, diners can enjoy live music nightly. In fact, the piano also serves as a table for those who want a more interactive dining experience.
Happy hour is available daily from 5 to 6 p.m., during which many appetizers are priced at 50 percent off and wines by the glass are discounted — the perfect excuse to enjoy a Signature experience.
