Multi-course wine dinner benefits a great cause

Located on the second floor of the Honolulu Design Center, Stage Restaurant specializes in world-inspired, local comfort food with a menu utilizing Hawaii-grown products. An elegant, contemporary setting and nearly 100 wines available by the glass on tap adds to the eatery’s already significant appeal.

Reflecting Stage Restaurant’s commitment to unique, special dining experiences, on the last Tuesday of every month, executive chef Ron de Guzman and one of his culinary team members create a special multi-course Ovation Wine Dinner. “Normally the dinner is $65 with the optional wine pairing at $35,” says general manager Michael Moore. “This month we are partnering with Susan G. Komen Hawaii for a fundraising dinner to feature and promote their More Than Pink program to expand awareness beyond October’s Breast Cancer Awareness Month. The Ovation Wine Dinner will be $85 with $20 going to Susan G. Komen Hawaii.”

Chef Joy Yamane is the featured culinary team member who created this month’s offering Ovation Wine Dinner. “She chose to include elements of pink in each dish to tie into the Komen Hawaii color theme,” Moore says. “Our wine program manager, certified sommelier Elise Liu will be selecting the wine pairings for the menu and presenting the selections throughout the dinner.”

The first course for the dinner will be Diver Scallop Carpaccio served with smoked trout roe, watermelon radish, myoga, scallions and a yuzu-white soy vinaigrette. Next up will be Pink Peppercorn Crusted Duck Breast with kabocha puree, plum gastrique, charred red cabbage and wheat berry and arugula. The final course will be Red Wine Braised Beef Short Ribs with beet risotto, gorgonzola, roasted alii mushrooms, pickled beet leaves and crispy garlic. For dessert, look forward to Peach Raspberry Cobbler, Buckwheat Biscuit, Ruby Chocolate Ice Cream and Guava Espuma.
