Though Genki Sushi made Kapahulu its original home in 1992, the franchise was actually founded by a Japanese company, Genroku Sushi, which had opened the first kaiten-style shop.
Genki’s director of purchasing, David Moon, says the initial concept grew from the desire to provide affordable sushi to everybody, in a convenient and fun way. With hundreds of international locations, it’s safe to say the chain has done just that.
With so many locales, Moon and the staff make sure to put a local twist on Hawaii’s stores — nine on Oahu, two on Maui, one on Kauai and one on the Big Island.
Every month, they create inventive sushi specials. “It’s just us experimenting,” says Moon. “A lot of our guys have been here for a long time and we always come up with something different.”
This month’s special is so mouth-watering, you’ll wish it was always on the menu. Mushroom Trio Special ($4.80) consists of tempura-battered mushrooms individually topped with spicy tuna, seafood salad and tuna salad. Unagi sauce and green onion make the flavors burst.
A number of best-sellers always cruise down the conveyor belt, including Spicy Tempura Roll ($4.80), complete with shrimp tempura, spicy tuna, green onion and unagi, and chili sauces.
