More and more health-conscious foodies are trying to eat right to stay fit these days, and many are turning to meat-free diets to achieve that admirable goal. It can be a challenge, though, when visions of your favorite foods start dancing in your head and prodding at your stomach for attention. But there are ways to savor your faves and still feel virtuous.

Hold on to your sombreros, veggie lovers, it’s fiesta time!

You may not think of Mexican cuisine as health food, but think again, because El Charro Mexicano Aiea Restaurant has what you crave.

“We have veggie fajitas, veggie burritos and veggie enchiladas,” says John Ramirez, who owns the eatery with his wife, Sofia.

For the Veggie Fajitas, which, John says, are quite popular, the chef sautes red, yellow and green bell peppers, zucchini, mushrooms and Maui onions, which comes to the table on a sizzling skillet in all its smokin’ fajita glory. Served alongside are your choice of corn or flour tortillas, Mexican rice, black beans, sour cream, guacamole and a side salad with pico de gallo — all for $10.50. And you can share: Fajitas for two costs only $15.99. The black beans are prepared without lard, notes Sofia, and all the condiments used are MSG-free — and if you want to change up the dish a bit, you’re welcome to have it just the way you want it. Si, se puede!
