Ahi & Vegetable has doubled in size at its main location on Dillingham Boulevard, extending its restaurant another 1,000 square feet and adding about 50 more seats for customers — plus three large flat-screen TVs.

Known for its fresh, healthy food, especially in fish and seafood, Ahi & Vegetable offers an assortment of donburi, sushi, roll sushi, bento and vegetable plates.

There also is a location in Downtown Honolulu (1126 Fort Street Mall), where it has been serving the business crowd on weekdays for the past 11 years, including many longtime regulars.

Owner Sam Seo, who has more than 15 years of experience in the fish business, says he always tries to get the highest quality of fish, which he sells to customers at an affordable price. You can usually find him at the fish auction every morning (except Sundays) at United Fishing Agency — Pier 38, selecting the finest catches of the day.

The Dillingham location, which recently extended its hours to 10 p.m. daily, also is in the process of getting its liquor license. Until then, customers are welcome to BYOB.

Among the popular menu items at Ahi & Vegetable are Spicy Ahi and Ikura Combo ($12, includes miso soup / $13 (set), includes miso soup and a small salad), and Bento No. 4 ($12, includes miso soup / $13 (set), includes miso soup and a small salad) with shrimp tempura, pan-fried ahi and salmon, furikake rice and ginger.
