Falling into fall fare

With fall in full swing, who doesn’t love getting a little festive? One of the best ways to do that is with fall flavor-infused food, and Fendu Boulangerie has you covered.

At the European-style bakery in Manoa Marketplace, Fuji Apple Danish ($2.35), which is available all year, is one of the most popular items during the holidays.

“We are taking fresh Fuji apples and making a filling out of them with brown sugar, cinnamon and nutmeg — and then we use our Danish dough, which we laminate with European-style butter,” explains chef and owner Niel Koep.

Fendu also features seasonal items that were especially created with fall in mind.

Pumpkin Financier with Dark Chocolate ($3.85), takes the standard almond cake concept and puts a fall twist on it with the addition of pumpkin puree and various spices topped with almonds.

“This dessert was designed for the financial district in France, hence the term financier,” Koep explains. “They are supposed to look like little gold bars. We add pumpkin to it this time of year, and the dark chocolate goes well with the pumpkin.”

In addition to Fendu’s tantalizing display case full of decadent desserts, the bakery also offers sandwiches, salads and pizza, to name a few.

This season, Squash Soup ($6.75) has been added into the mix. Available until January, the soup is composed of curried shrimp, kabocha and butternut squash, seasoned with herbs, and topped with brioche croutons.

“It’s our best-selling soup so far,” Koep says. “With all of these fall flavors, I kind of wish fall would last forever,” he adds.

Good news! Fendu Boulangerie constantly is creating items to coincide with each of the seasons.
