Happiness Comes by the Slice at Kaimuki’s Boston PizzaFeatures Order of the Day

When it comes to authentic, Neapolitan-style pizza, Kaimuki’s Boston Pizza stands a few pies above the rest. For more than 14 years, the pizzeria has served customers with its hand-crafted, savory pies, made completely from scratch. Owned by self-proclaimed pizza connoisseur Shawn Rubert, the family-friendly eatery has quickly become the gold standard for pizzerias across the island.
“Oftentimes people will try to over-complicate pizza, but it really comes down to three main things: dough, cheese and tomatoes,” explains Ru-bert. “More than anything, the integrity of those three things cannot be compromised.”
Every pie starts with a pan of freshly kneaded pizza dough. “Our dough is handmade using the highest quality flour by a local baker, who drops it off every morning,” says Rubert. “Nothing, including our aged mozzarella is ever frozen. We don’t even own a freezer.”
Diners also will appreciate Kaimuki’s Boston Pizza’s use of real tomatoes, canned on-site to provide maximum flavor. “A common misnomer about pizza is that it has to have a sauce, when in actuality, real Italian pizzas typically are made with crushed tomatoes,” says Rubert. “Allowing the natural flavors of the tomatoes to come through makes a world of difference.”
Popular selections include Boston’s Special ($28.60 per pie, $7.59 per slice), a specialty pizza topped with bell peppers, onions, mushrooms, olives and pepperoni; as well as the Big Red ($28.60 per pie, $7.59 per slice), a simple, yet extraordinarily flavorful combination of spinach, mushrooms, tomatoes and garlic. For those craving a purely vegetarian pie, Veggie ($28.60 per pie, $7.59 per slice) offers a medley of local spinach, mushrooms, olives, tomatoes and broccoli.
For a more unique but equally satisfying combination of flavors and toppings, the establishment’s premium-selection pizzas receive high marks. The BLT ($31.47 per pie, $8.12 per slice) features fresh Gorgonzola cheese, spinach, tomatoes, Applewood bacon and garlic. Another favorite, The Hogfather ($31.47 per pie, $8.12 per slice) pays homage to the Islands with its generous amounts of slow-roasted kalua pork, barbecue sauce, tomatoes, jalapeno and sweet peppers.
