3660’s New Menu Rises to the Top

When a restaurant manages to stick around for 20 years, it’s no coincidence. Only an agile mix of excellent customer service and a consistently mouth-watering menu could make an eatery last throughout the years.

3660 On the Rise, located at the foot of Wilhelmina Rise, has not only done just that — becoming an integral part of the community with its sweet blend of friendliness and outstanding Pacific Fusion cuisine — but also has managed to earn the trust of its loyal customers, who have embraced the restaurant’s ever-changing menu since 1992.

“It’s a collaboration between Chef Russell and I,” says Lydell Leong, who’s been chef de cuisine next to executive chef and owner Russell Siu for the past 15 years. The culinary duo are always coming up with new creations to switch up the menu, and their current teamwork boasts the same divine Euro-Asian flair that they’re known for. “It’s based upon what I wanted to eat,” Leong says with a laugh.

The Wow Tomato Salad is a new menu highlight, tossed with prosciutto, truffle oil, Kona sea salt, smoked balsamic reduction and house-made truffled mozzarella. The dish’s knock-out cheese is soaked twice before it is spotted with truffles and stretched to perfection. Reflective of the restaurant’s effort to use local produce whenever possible, the salad also features Big Island tomatoes and Kapolei-farmed Dry Land Nursery baby basil microgreens that, combined with all the flavors, will make you say “Wow!”

The tasty innovations continue with Crispy Garlic Scallion Prawns ($12.95), which in addition to being fresh, crunchy and covered in golden garlic flecks, are served with honey chili aioli on a bed of crispy spinach that in no way plays the garnish role (think kale chips’ tastier counterpart).

Then excite your taste buds with Pan-seared Copper River Salmon ($31) featuring wonderfully moist, wild Alaskan salmon topped with a refreshing bite of pickled Maui onions and yuzu butter sauce.

With such colorful additions to the menu, here’s to many delicious years to come at 3660.
