Enjoy ramen on the beach

The Kahala Hotel & Resort will host a special ramen tasting at Plumeria Beach House Feb. 21-26. The aptly titled “Ramen on the Beach” event features the culinary works of ramen master and professional chef Ivan Orkin.

“It’s always exciting to go to Hawaii,” Orkin says. “It’ll be exciting to feed the people of Honolulu.”

The ramen master began his culinary journey at the age of 15 as a dishwasher at a sushi bar and developed a love for Japanese culture. That passion turned into a critically acclaimed restaurant — Ivan Ramen in New York — which has been featured on multiple websites, magazines and TV shows.

Guests will have the chance to enjoy four types of the professional chef’s ramen served only on Feb. 21. These include the Triple Pork Triple Garlic Mazemen ($28) with tonkotsu broth and pork belly two ways; Chicken Paitan ($28) with chicken broth, egg yolk and togarashi chicken; Hot Shio ($27) served with sea salts, dashi, pork belly, soft egg and roasted tomato; and Cold Shio ($27) featuring shrimp, yuzu, dashi, rye noodles and tomato. All will be available for lunch and dinner.

Then, Feb. 22-26, Orkin will serve the Mazeman and Paitan in limited quantities. Guests will also have the chance to enjoy Pastrami Brisket Buns ($16) served with sauerkraut and Japanese-Russian dressing and Japanese Fried Chicken ($16) with garlic caramel, togarashi and shiso ranch.

Orkin says that his favorite part of creating his dishes is the process.

“It’s always really exciting when you feel like you’ve nailed it,” he says.
