Smoked Salmon Tofu Salad ($7)

As the summer temperatures continue to creep up, cool off with a favorite Shimazu Shave Ice combination and enjoy an array of local dishes at Hawaii’s Favorite Kitchens — next to the flagship Rainbow Drive-In on Kapahulu Avenue.

In addition to offering a variety of local dishes, including poke, plate lunches, KC Waffle Dogs, and many more, “HFK complements our existing restaurant, Rainbow Drive-In, next door by serving some of their popular plates like the chili and boneless chicken with gravy, while offering additional options such as steamed vegetables and brown rice,” says owner Chris Iwamura. “We also offer a variety of local snacks from Lin’s Hawaiian Snacks and Goodies by Holly, and have our own Rainbow Macadamia Nut Okoshi.”

KC Waffle Dog ($4.25)

The Rainbow Okoshi ($8.95) is a sweet puffed-rice snack topped with rainbow sprinkles and macadamia nuts for a fun twist on the traditional Japanese recipe. Or, cool off with a Small Shimazu Shave Ice ($6.50) with one’s choice of up to three flavors from 70-plus options, and additional toppings including mochi, li hing powder, creamy haupia and more.

Smoked Salmon Tofu Salad ($7) features a block of Mrs. Chang’s tofu, watercress, cabbage, tomatoes, onions, shredded carrots, smoked salmon and garlic chips served with housemade dressing. And, be sure to pick up a KC Waffle Dog ($4.25), as the hot dog is coated with a slightly sweet batter and cooked in a custom waffle iron until the edges are crispy before being served with a side of special yellow sauce.
