Surrounded by a trickling pond, lush foliage and spectacular ocean and sunset views, Noe at Four Seasons Resort Oahu at Ko Olina is the preferred choice by diners to bask in relaxation, comfort and delectability.

Boasting refined yet simple dishes, the restaurant, led by chef de cuisine Ryo Takatsuka at the helm, features contemporary Italian cuisine with a hint of local fusion. Takatsuka comes from an impressive culinary background with numerous accolades including turning up the heat in Michelin-rated kitchens throughout Italy and Japan before arriving at Four Seasons.

Whether inkling to try Noe for the first time or coming back for more, diners will want to add Noe’s Capichera & Podere Sapaio Wine Dinner ($175 per person) to their plans this Wednesday night. Takatsuka has an exquisite four-course menu lined up, with each round paired with a sparkling or crimson glass of spirits from wine-makers Capichera and Podere Sapaio — both located in Italy.

The first two dishes are paired with white wines from Capichera, which provide a light start to the night. First out is Ahi Salad with soft, sweet scallops and nice, chewy cuts of squid. It is paired with Capichera Vign’Angena Vermentino di Gallura 2017.

Second up is a unique pasta mix that diners can’t resist. The Maccheroni Neri (made with squid ink) is tossed and mixed with generous servings of crab, bottarga, sea urchin, cherry tomato and asparagus. It is paired with Capichera Vermentino Isola dei Nuraghi 2016.

The last two dishes are paired with red wines. The first, Podere Sapaio Bolgheri Superiore 2015, provides bold flavors that greatly complement the superior tenderness and savoriness of the Beef Filet it comes out with. The Beef Filet is plated with chestnuts, wild mushroom, beets and a truffle sauce that is absolutely to die for.

The sweet ending to this meal is a Chocolate Bliss dessert paired with Podere Sapaio Volpolo 2016, which is a softer red that presents just enough flavor to seal the deal.
