Manoa’s European-style bakery always rises to the occasion

Niel Koep, chef and owner of the European-style bakery Fendu Boulangerie, constantly creates an array of both new items and menu mainstays to keep customers satisfied.

Koep explains that he started the bakery in 2009 after working for more than 18 years as an executive pastry chef at resorts on the island of Lanai.

He passionately desired to open his own bakery for a long time, and eagerly took the reins when the opportunity appeared to start his business in Manoa.

Koep emphasizes that the bakery, located at Manoa Marketplace, uses the highest grade, all-natural ingredients in the baked goods, which include breads, scones, croissants, desserts, Danish pastries, sandwiches, rustic gourmet pizzas and more.

In addition, the bakery regularly offers daily specials that always pleasantly intrigue patrons seeking something exciting to try.

A recent addition to the bakery’s lineup is the Crunchy Lilikoi Cream Puff ($3.75).

“We take a classic cream puff and bake onto it a crunchy cookie-like topping. It is then filled with a whipped cream and pastry cream filling flavored with lilikoi. Other flavors are available, like vanilla cream and a cannoli cream filling,” says Koep.

Another new item offered by Fendu is the Valrhona Dark Chocolate Flower ($5.99). It incorporates a dark chocolate mousse with a rose flower water center in the mix that creates a feast for both the taste buds and the eyes.

Although it’s not new to the menu at Fendu, the Ground Wagyu Beef Sandwich ($12.50) certainly is a delicious savory choice at the bakery. This indulgent sandwich consists of one-third of a pound of carefully ground Wagyu beef, which is pan-seared and then served with tomatoes, sweet onions, pickles, mayonnaise and fresh farm greens. Customers can have Provolone, Swiss or Cheddar cheese added to their sandwich for just 85 cents more.
