A CLOSER LOOK AT THIS WEEK’S HOUSE SPECIAL: BASIL PESTO CHICKEN PANINI ($9.75)

The front half of Manoa’s Fendu Boulangerie is spotless and pristine, presenting display cases of endless sweet treats, including cheesecakes, fresh fruit tarts, panna cotta desserts and so much more. Additionally, there always is a heap of homemade bread options, which vary each day.

Beyond the kitchen doorway, however, there’s a very different scene, including flour-covered wooden countertops, bustling bakers and cooks and the clanking of baking utensils and oven doors being opened and closed — the way it should be in any top-notch bakery, or boulangerie. In the center of this beautiful chaos, you’ll find owner and chef Niel Koep, who opened the establishment back in 2009.

Since then, Koep has been baking away — churning out gourmet pizzas, handcrafted sandwiches and the delectable nibbles you’ll find in the front of the bakeshop.

Some savory standouts from the menu include Smoked Muscovy Duck Breast Pizza, Basil Pesto Chicken Panini and the breakfast delight, Fendu Breakfast Panini.
