Whether you’re a diner person or not, you will not be able to resist a well-known morning favorite from Wailana Coffee House. Take a stroll down to this legendary Waikiki eatery, where it offers its own take on a breakfast classic. The Eggs Benedict ($11.90) has been raved about by many and, from the tastes of it, this dish certainly does not disappoint. “It’s one of our most popular items,” says owner and manager Kenton Tom. Sitting on top of an English muffin lies smoked ham and turkey, two poached eggs, fresh hollandaise sauce and a garnish of parsley. What makes Wailana’s version stand out? The secret is in the sauce. Made without binding agents, such as flour or cornstarch, the hollandaise delivers a well-perfected lemony, buttery and lightly spicy flavor. Any eggs benedict-enthusiast will agree that Wailana Coffee House’s is not to be missed.

A side of crunchy hash browns delivers a contrast in texture and helps to sop up what’s left of the savory sauce.

The house-made hollandaise sauce is prepared with clarified butter, egg yolks, Tabasco, salt, pepper and lemon juice. It slowly is whipped over a double broiler, using the steam to bring the sauce to perfection.
