Ever wonder what goes on behind the scenes at your favorite restaurant? Well, much credit goes to the many chefs, owners and managers who work diligently day in and day out to make sure Hawaii’s diners have a top-notch dining experience.

This week, Dining Out gets the inside scoops from Ho Ho Chinese Cuisine’s Director of Sales Armando Bauzon, who gives us a little taste of Ho Ho Chinese Cuisine and shares just what fuels his culinary drive.

Who or what inspires you? My family has inspired me since childhood to be a part of the food and beverage industry. When I was young, I would always watch my entire family cooking together, and I grew to love food. As I got older and kept learning, I became the best chef in the family!

What’s your most popular dish? Our most popular dish is definitely Fried Chicken Wings. Some people have even shared with us and posted online that ours are the best wings they’ve ever tasted!

Is there a dish that you create that’s not on your menu, but available upon request? We make a delicious Oolong Tea Smoked Shrimp Salad, which is a good choice if you’re looking for a lighter dish to eat. Not many people realize that many dishes in Chinese cuisine use tea smoke to add flavor.

What is the biggest compliment you’ve ever received as a chef/ manager/owner? In 2004, after I moved over to Ho Ho Chinese Cuisine, we received a certificate of excellence for our food and service. It was such an honor and felt great to see my hard work recognized.

If you could serve food to a celebrity, who would it be and why? What dish would you serve? I would love to serve Andrew Zimmern, the host of Travel Channel’s Bizarre Foods. I always watch his show, and would really enjoy the chance to meet him. I would probably serve him our Fried Chicken Wings, because of the unique blend of spices we use to make them.
