preceded its August opening in Ward Village.
Furthering his father’s legacy as a successful izakaya owner, Tomo
Takahashi first founded JINYA Ramen Bar in Tokyo in 2000. The restaurant’s 49th location continues Takahashi’s rep- utation for serving ramen to please even the most discerning palate.
“What makes this ramen unique is
that our noodles are made from scratch and undergo a special aging process before they are cooked in Fuji water which is 99.9% free from impurities,” describes general manager Robert Fewell. “The broth is slowly simmered for more than 20 hours.”
Six broths (including vegan options) along with an array of authentic top- pings and homemade, aged hot sauce create a plethora of customizable ramen options.
