When it comes to specialty dinners, chef Chai Chaowasaree has made an art of pairing the tantalizing flavors of his award-winning island fusion cuisine with some of the best wines on the market.
The monthly Chai’s Cuisine and Wine Pairing dinners have sold out over the six months that Chaowasaree and his skilled team have offered the special experiences. At 6 p.m. on March 21, diners can look forward to the next edition in the series — for just $119 per person — featuring master sommelier Michael Jordan, who has forged his reputation in California’s Wine Country.
Guests will be treated to an opening course of Thai Chicken and Shrimp Salad paired with Cambria Viognier Tepusquet Vineyard Santa Maria Valley 2020 — a white wine featuring exotic aromas of honeysuckle, peach, lemon curd and baking spices.
Up next is Corn Chowder with Prosciutto Garlic Cheesy Bread coupled with Giant Steps Chardonnay Sexton Vineyard Yarra Valley 2020.
Duck Chow Fun is one of Chef Chai’s favorite noodle dishes, which is served with Penner Ash Pinot Noir Willamette Valley 2021 that features bold berry notes.
The fourth course is headlined with another Chef Chai favorite: Braised Boneless Beef Shank with Five-Spice Demi, which is married with Stonestreet Cabernet Sauvignon Alexander Valley 2018.
For dessert, Thai Pumpkin Custard puts a sweet finish on a memorable meal.
