Through The Kahala Hotel & Resort’s grand entrance and into Hoku’s elegant ocean-view dining room, guests can embark on a journey to taste extraordinary, elevated Parisian fare.
From now until April 22, the Paris Menu ($135) showcases the exquisite flavors of France via a three-course dinner.
Drawing inspiration from his recent trip to Paris, executive chef Jonathan Mizukami shares some of his unique culinary experiences with local diners.
Guests are greeted to the pleasantness of Paris with the first savory serving of gougères, a baked choux pastry mixed with Gruyère cheese. A cucumber salad then awakens the palate with a fresh, crisp bite.
The first course is hand-cut local beef tartare and Gava Grow petite lettuce. Brunoised local beef tenderloin is balanced with egg yolk, onions, capers, mushrooms and special seasonings, and served alongside crunchy toast. A side of local Kailua lettuce is mixed with Maui olive oil and red wine vinegar to offer a light burst of brilliance.
The second course is sautéed ris de veau, an elegant sweetbread with a slightly crisp exterior and a soft creamy interior. Two sauces — sauce périgourdine and foiegras emulsion — and shaved périgord truffle transform the dish into a multi-sensory delight.
The menu concludes with profiteroles à la parisienne, a Paris-style cream-filled profiterole topped with cold ice cream and a silky chocolate sauce.
The Paris Menu is served from 5:30 to 8:30 p.m. Tuesdays-Saturdays through April 22.
