Waiolu Ocean Cuisine’s new dinner menu, created by executive chef Shoki Namatame, is inspired by seafood harvested and caught in Hawaiian and Pacific waters. Guests can expect to indulge in mouthwatering and elegantly prepared Maine Lobster, Alaskan King Crab Legs, Pacific Thread fish (locally known as Moi) and Kona Abalone. Set the tone of the night with light yet flavorful selections starting with Hearts of Palm & Shrimp Salad ($22) and Rainbow Ceviche ($16). The salad is a crisp refresher comprising Maunawili greens, watermelon radish, lime and a zesty cilantro dressing.
Meanwhile, the ceviche is a classic favorite everyone is sure to enjoy, which mixes citrus cured catch of the day, jalapeno, cilantro, cucumber, carrot and bell pepper — it is a combination sure to pleasantly stimulate taste buds with its light tang and hint of piquant charm.
As a main course, treat yourself to a generous 1 1/4-pound Maine Lobster ($34) that can be prepared steamed with drawn butter, grilled with a French sauce vierge, or stir fried with black bean or oyster sauce — either way you decide, will have yourself and everyone involved salivating for more.
Then, add prime pieces of chef’s choice assorted nigiri that come with six ($30), eight ($40) or 10 ($50) sushi — and don’t forget to order a drink to accompany the savory pieces with Waiolu’s premium sake list or also opt for a sake flight.
Another tantalizing option can be found at the raw bar with a half-dozen oysters ($18). There are four different kinds of oysters (kumamoto, fat bastard, kushi or shigoku) and each serve as tasty, fun-to-eat slurp ups.
