Surfers know the Hawaiian scale of wave measurement: the actual wave height is almost twice as what’s quoted. At Tsunami, it’s no different. The flavors are maximized. “Before, we used to offer bar-style food,” Rick Shibasaki, manager of Tsunami explains. “Now we have a much more refined menu.” With chef Wade Ueoka at the helm of the menu, the restaurant is dishing up Hawaiian regional cuisine with a twist. The eatery experiments with fresh, local produce and meticulously prepares each dish to bring out the unique flavors, such as Tonkatsu ($16), which is slow-roasted before frying and served with braised cabbage and a mustard katsu sauce.
