More than 50 years ago, 24-year-old Japanese su- shi chef Fumio Saito had a vision to create a sushi restaurant with an — at the time — unheard of component known as “kaiten sushi” (which translates to “revolving”). In 1968, he established an eatery with a revolving conveyor belt to serve sushi, blending traditional cuisine with modern technology. Fast-for- ward to now and Genki Sushi boasts locations from Lihue to Hilo, across Japan and on the mainland.
Today, most Genki Sushi locations across the state pay homage to the restaurant’s beginnings and offer a double-rail bullet train sushi deliv- ery configuration for convenient,

ultra-fast ordering. As part of the process, diners can place orders via a touch-screen panel found at their table and receive fresh sushi favorites in no time.
