Duke’s Famous Prime Rib
Ingredients
- Hawaiian Rock Salt 1/4 lb
- Lawry Seasoning 2 tbsp
- Black Pepper 1/4 oz
- Dried Rosemary pinch
- Dried Thyme pinch
- Bay Leaves 3 leaves
- Garlic 1 oz
- Parsley 1 oz
- Olive Oil 1 tbsp
- Standing Rib Roast 48 oz
Horseradish Cream
- Prepared Horseradish 1 cup
- Sour Cream 1 cup
- Salt and Pepper 1 tsp
1. Combine all ingredients and mix until smooth.
Cooking Instructions
- For the seasoning, place the rosemary, thyme, bay leaves, garlic, parsley and oil in a food processor and chop fine.
- Place in a mixing bowl and add the remaining ingredients and mix.
- Rub the roast and allow to marinate overnight if possible but at least 1 hour.
- Preheat oven to 500 degrees and in a roasting pan place the roast in the oven for about 20 minutes to brown. Remove the roast from the oven.
- Turn the oven down to 225 degrees and allow the oven to cool all the way down before placing the roast back in. Cook for another 40 minutes, using a meat thermometer check the roast temperature. You may cook to your desired temperature; we recommend 125 degrees. Allow the roast to rest lightly covered with foil for about 20 minutes before slicing.
