On Oct. 19, delicious food and live music come together in a luxurious seaside setting as Four Seasons Resort Oahu hosts its fall Makani Music Series. This elevated concert and culinary experience will take place on the resort’s Ocean Lawn with dining stations presented by the chefs at La Hiki Steak, Noe, Mina’s Fish House, Waterman Bar & Grill, and Hokulea Cafe and Bar. The 95 members of the Honolulu Wind Ensemble will provide musical entertainment.

“Our chefs came up with seasonal dishes that work well for this sort of event,” says Richard Polhemus, executive chef for the resort. “The concert features food from each of our restaurants.”

La Hiki will be offering Whole Hog “Lechon” Kewali, chopped and seasoned to order, with Hapa Rice. “We’re roasting the whole pig, not just the belly,” Polhemus says. “It’s a nice way to eat crispy, rich pork.”

From Mina’s Fish House comes Fish Tacos with Whole Roasted Fish, Salsa Verde, Pickled Onions, Avocado and Lime Crema.

Want an American classic? Waterman Bar & Grill will be serving a Griddle Burger with cheddar cheese, house-made bread and butter pickles and their secret sauce. “It’s our take on the classic burger,” Polhemus says.

Fish Tacos with Whole Roasted Fish

For vegetarians, Noe will be offering Baked Rigatoni with Rapini, Ricotta, Parmesan Reggiano and San Marzano Tomatoes.

Dessert comes via Hokulea Cafe and Bar in the form of Rum Cake Sundaes. It’s made with Ko Olina’s own Ko Hana Agricole Rum and candied pineapples. “This is a good preview for the rum cakes we’ll be selling later this year.”

Baked Rigatoni

The fall Makani Music Series is the result of nearly a year’s worth of planning. Henry Fang is catering and conference service coordinator at Four Seasons Resort Oahu. He also plays clarinet with the Honolulu Wind Ensemble. “I’m passionate about music, and back in January I had the idea of putting on this concert,” he says. Fang adds that the ensemble will play for about two hours. “Most of the music will be from movie soundtracks to keep people engaged,” he explains.

The fall Makani Music Series takes place at 6 p.m. on Oct. 19. Concert packages are available for $85 per person and include table seating by row, four food and beverage vouchers, a welcome beverage and complimentary parking. VIP packages are available at $135 per person and include front row table seating, four food and beverage vouchers complete with Four Seasons tableside service, a welcome cocktail, priority check in and complimentary parking.
