“We use quality pork that is very tender, and the meat is rinsed for 30 minutes before anything else is done to thoroughly clean it,” says Leung of the extensive preparation process. “The sauce is then added and the meat is marinated overnight to lock in the flavor before being cooked in the oven and finished with honey to seal in the moisture and create that recognizable orange-red color.
“The meats are also prepared in a way that removes excess oil so there’s just enough seasoning and flavor without it dripping with oil. It’s a lot of work involved, but that’s what it takes to make the quality meats we provide, and our customers appreciate that.”
