The gastronomic blessing that is sushi, which originated in the eighth century in Japan, has evolved into something completely different today. The once exclusive delicacy of raw fish and rice now comes in many forms and is accessible to everyone. Sushi is served on conveyor belts, also known as kaiten sushi; it’s presented with layers of oozing sauces and edible decorations; it’s offered in vegetarian varieties without fish at all; and it even can be delivered to your doorstep or ordered to go.

Available vegetarian selections include Veggie Hand Roll ($1.80), which wraps slices of cucumber, avocado, lettuce and a touch of mayo (optional) in sushi rice and nori. Or, if you want something heartier, opt for Spicy Kakiage Don ($6.50), which includes three vegetable tempura patties (kakiage) served over sushi rice, drizzled in spicy and unagi (similar to teriyaki) sauces and topped with green onions. The patties are made with sliced carrots, kale and white onion and are battered and deep-fried to a golden crisp.
