Soojung “Soo” Heu was always involved in the food and beverage industry. Growing up in Korea, she worked at her parent’s grocery store, which grew into a popular restaurant. When her parents were ready to retire, they took ownership of a popular Italian coffee shop franchise called Caffè Pascucci that has locations in more than 25 countries.

So, franchising was familiar to Soo. While she studied hotel management at University of Nevada, Las Vegas, she would often stop at the original Capriotti’s Sandwich Shop near campus to have its signature sandwich, The Bobbie. She knew that the sandwiches there were different.

When the time came to launch Capriotti’s in Hawaii — the chain’s 157th location — both Soo and her husband, Chase, knew this was something that locals would embrace and recognize because the parent company is headquartered on the Ninth Island and has a remarkable 112 locations in that area alone.

AL: Can you tell us more about Capriotti’s and what makes the food unique?

SH: Capriotti’s, headquartered in Las Vegas, Nevada, is known for its award-winning, handcrafted sandwiches and more. The menu features American wagyu, hot and cold turkey subs, cheese steaks (with vegetarian options), classic sandwiches, vegetarian sandwiches and fresh salads. It was founded in 1976 in Wilmington, Delaware, and, in 2008, the new owners relocated Capriotti’s Sandwich Shop to Las Vegas. It is an award-winning nationally franchised restaurant chain that remains true to its 40-year tradition of slow-roasting whole, all-natural turkeys in-house every day. There are over 157 locations across the United States.

AL: What have you prepared for us to try?

SH: Our sandwiches come in a variety of different sizes: half sub (5 inches), small sub (8 inches) or medium sub (10 inches). The bread is from Great Buns, the largest bakery in Vegas.

The sandwiches that we have prepared for you to try are the bestsellers and customer favorites.

For our vegetarians, we have the Impossible Cheese Steak ($9.99, half sub; $13.49, small sub; $15.99, medium sub). Cheese steak fans will be asking themselves, “This isn’t real meat?” It’s made with Impossible plant-based meat, melted white American cheese, mushrooms and onions.

My favorite sandwich, The Bobbie ($9.49, half sub; $13.99, small sub; $15.49, medium sub), is like Thanksgiving in a sandwich. Its slow-roasted turkey topped with cranberry sauce, handmade stuffing and mayo.

Our famous pastrami sandwich, the Capastrami ($9.99, half sub; $13.99, small sub; $16.49, medium sub), is not your average pastrami. This classic is filled with hot pastrami, melty Swiss cheese, crunchy coleslaw and Russian dressing.

American Wagyu Slaw Be Jo ($10.49, half sub; $14.49, small sub; $16.99, medium sub) is an extraordinary sub layered with ultra-premium American wagyu beef, coleslaw, provolone cheese, Russian dressing and mayo.

Our bestselling Cap’s Fries is the Cheese Steak Fries ($9.49, regular; $13.49, large). We offer various soft drinks in either medium ($2.99) or large ($3.99).

AL: For larger parties, do you offer catering options?

SH: We have a variety of options for every occasion — party trays, Cap’s meatball bar, party salads, and extras such as stuffing or baked cookies. Check out our website (capriottis.com) and click on party trays for the full menu. For larger orders, we ask that you call us at least a day in advance, as everything is made to order.

AL: What is CAPAddicts! Rewards and how does it work?

SH: You can download the CAPAddicts! Rewards app for iOS and Android to earn and redeem rewards. This is based on a points system, where users earn one point per dollar spent in-app, online or in-shop. Once a user reaches 100 points, they will unlock a $10 reward to apply to any future purchase.

AL: Anything else?

SH: I love Hawaii — the people and culture — and want to share my love of Capriotti’s quality of food with everyone here. Every time I make a sandwich, I love to see the customers’ reaction from their first bite. It’s the same look that I had when I bit into my first Bobbie sandwich years ago — happiness and pure joy. We are ecstatic to have this once-in-a-lifetime opportunity to bring what we feel are the best sandwiches of true quality to Hawaii for the first time.

Wherever my husband and I travel, we cannot find anything that matches up to the standard of sandwiches that Capriotti’s has. We are foodies and believe that guests will love the wide scope of offerings we provide.
