Mahina & Sun’s Whiskey Sour ($16)

In honor of Whiskey Sour Day on Aug. 25 Mahina & Sun’s at the Surfjack Hotel & Swim Club is showcasing its version of the classic cocktail.

Led by executive bar czar Christian Taibi, who applies his previous experience at legendary New York night clubs to the poolside Waikiki bar that serves as the larger restaurant’s centerpiece, Mahina & Sun’s offers up an array of enticing cocktails.

Its revamped Whiskey Sour ($16) is one that is not to be missed by enthusiasts and adventurers.

“In the Mahina & Sun’s whiskey sour, I wanted to end the rye versus bourbon dispute by blending them together. It gives more complexity to this classic,” explains Taibi.“We also double down on the lemon flavor, using a lemon cordial that we make from fresh lemon juice, peels and sugar.”

Another Mahina & Sun’s deviation from the classic is the replacement of the traditional egg white with aquafaba (vegan egg white) because egg white has “numerous negatives such as bacteria, time, shelf life and ultimately cus tomers’ dislikes,” says Taibi.

Another whiskey libation on the menu is the Kahiko (PuuWai) ($16), a Hawaiian spin on an old fashioned with local Kupu whiskey served over coconut water ice cubes.
