Duke’s Famous Prime Rib

Ingredients

  • Hawaiian Rock Salt 1/4 lb
  • Lawry Seasoning 2 tbsp
  • Black Pepper 1/4 oz
  • Dried Rosemary pinch
  • Dried Thyme pinch
  • Bay Leaves 3 leaves
  • Garlic 1 oz
  • Parsley 1 oz
  • Olive Oil 1 tbsp
  • Standing Rib Roast 48 oz

Horseradish Cream

  • Prepared Horseradish 1 cup
  • Sour Cream 1 cup
  • Salt and Pepper 1 tsp

1. Combine all ingredients and mix until smooth.

Cooking Instructions

  1. For the seasoning, place the rosemary, thyme, bay leaves, garlic, parsley and oil in a food processor and chop fine.
  2. Place in a mixing bowl and add the remaining ingredients and mix.
  3. Rub the roast and allow to marinate overnight if possible but at least 1 hour.
  4. Preheat oven to 500 degrees and in a roasting pan place the roast in the oven for about 20 minutes to brown. Remove the roast from the oven.
  5. Turn the oven down to 225 degrees and allow the oven to cool all the way down before placing the roast back in. Cook for another 40 minutes, using a meat thermometer check the roast temperature. You may cook to your desired temperature; we recommend 125 degrees. Allow the roast to rest lightly covered with foil for about 20 minutes before slicing.
