Genki Sushi has been the go-to spot for affordable Japanese cuisine since the early ’90s. After opening its first location in Kapahulu, the Japan-based dining chain has come a long way, now boasting locations on Oahu, Kauai, Maui and the Big Island. The eatery shows no sign of slowing down (it now has a sushi robot that can make 3,000 rolls per hour) and is currently open for takeout, dine-in and delivery.
The menu has more than 120 items, including local favorites like Spicy Tuna, a small plate that encompasses cubed ahi mixed with a special sauce, all bundled up with two shari rice balls and gunkan nori. It’s then garnished with green onions.
To keep with the piquant theme, try a spicy tempura roll. Wrapped in sheet nori, ebi fry is one of the main componets. Decorated in unagi and sweet Thai chili sauce, the roll is finished with green onions.
Those looking to stick with the staples can order the Chicken Karaage. Served hot, the meat is marinated and fried, revealing hints of ginger and dashi in each bite.
