Lead mixologist Arianne Zamora offers new creations and innovative takes on classic cocktails.
Enjoy a sunrise at sunset with a Hibiscus Sunrise ($18). This colorful concoction features hibiscus-infused tequila, lilikoi, orange and grenadine. It’s as lovely to look at as it is delicious to drink.
An old tiki bar standard, the Singapore Sling ($18) blends Remy Martin VSOP Cognac, Sipsmith Sloe Gin, strawberry, pineapple, Hawaiian raw honey and lemon. It’s a modern, high-end interpretation of a drink that traces it origins back to 1915 and the legendary Raffles Hotel in Singapore.
The Berry Cherry Rob Roy ($19) is an elevated version of the famed turn-of-the-20th-century New York City cocktail, blending Luxardo maraschino cherry liqueur, berry-infused sweet vermouth and Scotch whisky served with a hand-cut ice cube and drunken cherry garnish.
BEYOND BAR FOOD
If you want some delectable food to complement your delicious drinks, The Bar at Hokulea offers several tantalizing options that rise well above standard bar fare, including Poke Nachos ($19) with ahi tuna poke, spicy aioli and furikake and Kunoa Cattle Beef Tartare ($15) with Tabasco, mayonnaise and cured egg yolk. Those with lighter appetites might prefer the Cheese Board ($24) featuring a selection of local and imported cheese, Marcona almonds, local fruit jelly, fresh fruit and toasted baguette. It pairs well with many of the bar’s wine selections.
