‘Fire up’ your taste buds

The Clam Ciale ($20)

Brick Fire Tavern along Hotel Street in Honolulu’s Chinatown has risen to the top of the local food sphere by serving the best in authentic Italian Napoletana-style pizzas.

These pies provide a light crust with perfect crispiness and satisfyingly chewy texture.

The experience highlights craftsmanship at its finest, utilizing house-made dough and the freshest local and imported ingredients. In fact, restaurant owner Matthew Resich notes that the establishment has been Vera Pizza Napoletana (VPN) certified, meaning it strictly adheres to traditional Naples region high-quality preparation.

Paired perfectly to complement the briny sea flavors of pizza such as the restaurant’s current special — The Clam Ciale — is a glass of the restaurant’s Soave Venetian Chardonnay with notes of island pineapple and mango.

Additionally, Brick Fire Tavern offers happy hour specials daily from 3 to 6 p.m. with deals on the eatery’s popular pizzas, cocktails, beer and wine.

The restaurant also accepts both small and large party reservations for graduation celebrations. Reservations can be made online through the company’s website or by calling the restaurant directly.

‘DOUGH’-LICIOUS AND ‘CLAM’-TASTIC

Brick Fire Tavern currently features its pizza special The Clam Ciale ($20), a wonderful choice for a casual lunch break meal or intimate dinner. This appetizing savory pie is made with caramelized onions and a white wine sauce reduction. It is flavored with the Italian cured-meat called guanciale, white clams and pecorino cheese. Everything is artfully topped with parsley and served with lemon wedges.
