Noi Thai’s Tom Yum Lobster ($29) is made tableside, and includes a hot infusion siphon to freshly brew the famous spicy and sour soup for each order. Using a contraption that incorporates two glass chambers — the top is filled with lemon grass, kaffir lime leaves, galangal, tomatoes, red chilies, spring onions and parsley, while the bottom holds homemade chicken broth, fish sauce and fresh lime juice — the liquid mixture is heated on the bottom, siphoned to the top chamber and infused with all the ingredients to make the perfect broth. The soup is lastly poured over a large whole lobster tail and mushrooms.
