A CLOSER LOOK AT THIS WEEK’S HOUSE SPECIAL: Chocolate Macadamia Nut Flan ($7.50 per slice, $52 for a whole pie or otherwise included in all of the buffets)

Amid the buffet spread at Prince Court of The Hawaii Prince Hotel, laden with fresh fish, copious amounts of “Eurasian” dishes and trays full of desserts and bite-sized edibles, pans the scenic view of sailboats docked at the harbor. Prince Court has been serving tourists and kamaaina buffet-style for years, offering the best in East meets West fare with a killer view. Under the expertise of executive chef Kirby Wong, favorites include the sushi bar (available for lunch and dinner), the shabu shabu and prime rib stations and, of course, the desert table. Hotel guests and kamaaiana have especially praised Prince Courts’ Chocolate Macadamia Nut Flan, prepared 90 to 100 times a week by lead pastry chef, Eddie Cadiz.

Dark chocolate is whisked in with cream to create a sumptuous layer, while another layer of plain whipped cream is added on top. Usually garnished with chocolate shavings, Cadiz suggests that fresh fruits or even dried coconut pair well with the pie.

The flan is represented in a mixture of caramelized sugar, cream, chocolate and local macadamia nut filling. The roughly chopped macadamia nuts add texture and crunch.

The Chocolate Macadamia Nut Flan is actually a pie, with a buttery, flaky crust coated with a dark chocolate shell.

“We’re very fortunate to have kamaaina support,” notes Ward Almeida, director of food and beverage. “Even though occupancy (in hotels) is low everywhere, locals still come to support us.” And the team at Prince Court continues to show their appreciation by offering the freshest, tastiest food possible. However, it is diners who are the thankful ones.

The balance of rich chocolate and light and fluffy cream will have you asking for a second slice, or demanding the whole pie — which Prince Court makes possible!
