Last year, Ala Moana Hotel welcomed The Signature Prime Steak & Seafood to its 36th floor, the fine-dining landmark that once was home to Nicholas Nickolas and Aaron’s.

Locally owned and operated by Peter Kim of Yummy Restaurant Group, The Signature Prime Steak & Seafood is a classic American steak house that specializes in aged prime steaks and fresh seafood.

The restaurant also is known for its stunning atmosphere, offering a breathtaking, panoramic view of Honolulu, including the Pacific Ocean.

From the menu, restaurant manager Chad Fernberg recommends Prime Bone In Rib Eye ($57.95, 22 ounces) and Prime Porterhouse ($64.95, 24 ounces), which are broiled in a special high-temperature broiler designed to keep the meat’s natural flavors intact.

“Each (slabs of beef) are USDA certified prime, meaning they are in the top 2 to 3 percent of beef in terms of marbling and texture,” notes Fernberg. “Additionally, both cuts are wet-aged for at least 28 days. When meat is allowed to age on the bone, it enhances the flavor and tenderness of the overall product. The grading and aging of these bone-in cuts combine to create truly exquisite steaks.

“As for the Porterhouse, it really is the best of both worlds when it comes to steak,” explains Fernberg. “You have filet mignon, which is most tender but not the most marbled cut of beef. And you also have New York strip, which has much more marbling and a slightly firmer texture. So you get a little bit of everything.”

Currently, the restaurant offers a special three-course prix-fixe menu for $59.99 (available before 6 p.m. and after 8 p.m. daily) featuring some of the most popular items from the regular menu.

“What really sets The Signature Prime Steak and Seafood apart from other steak houses is that we really have the total package,” says Fernberg.

“We use the finest and freshest meats and seafood, and we serve them in one of Honolulu’s best atmospheres, with stunning views of the island and live music playing from the grand piano.”
