Tin Hut BBQ commands attention

As a military worker who grew up hosting barbecues across the Mainland, Frank Diaz dreamed of starting his own barbecue business one day. So it came as no surprise when he launched Tin Hut BBQ, a barbecue-inspired food truck, after relocating to the Islands.

“After a few years working here, I transitioned over as a Department of Defense civilian,” says Diaz. “While there were lots of teriyaki and Pacific Rim options, traditional Southern-style barbecue was not as common.”

Now operating from a permanent kiosk inside Schofield Barracks PX food court, in addition to providing catering service, Tin Hut BBQ brings authentic barbecue fare created from Diaz’s homemade recipes.

“Rather than cook our meat on high heat quickly, we opt to cook on low heat and slow, averaging between 12 to 14 hours to get the texture and flavor just right,” he explains. “We also make our own dry rub and barbecue sauce using a combination of spices such as cayenne pepper, paprika and raw brown sugar.”

First-timers should try Tin Hut BBQ’s classic Ribs ($12) or Brisket ($12), cooked until moist, and served with a choice of two signature sides. Popular choices include Chipotle rice, smoked barbecue beans and spicy macaroni and cheese.

Another favorite is Grilled Cheese with Pulled Pork ($10), which heightens the classic sandwich’s flavor profile with generous portions of tender, marinated pork.

Customers will enjoy the perks of high-quality barbecue fare at a friendly price point. “We have not raised our prices since we first opened,” says Diaz, who still runs the food truck at numerous locations throughout the week. “For me, this is a labor of love.”
