Artisan Pizzas Turn Up the Heat

It’s no secret that not all pizzas are created equal. This is because of the simple fact that it takes a certain degree of expertise to produce a truly authentic Italian pizza. While many have tried, few have successfully crafted the Neapolitan-style pies with such accuracy and creative integrity than Inferno’s, Oahu’s up-and-coming artisan pizzeria.

“Making quality pizza is not just about using the right ingredients, but how you physically cook the pizza is just as important,” says owner Kyle Okamoto. “From the beginning, we have always relied on our classic, kiawe wood brick oven.”

Not your average kitchen oven, Inferno’s brick oven heats up to 800 degrees, cooking its pies in approximately two minutes or less. “Most pizza shop ovens go up to 350 degrees or so, so it takes a lot longer to cook, which can cause the crust, toppings and sauce to overcook,” explains Okamoto. “With the brick oven, the heat is so intense that the crust remains crispy and chewy all at once, and you can taste every ingredient so clearly.”

In little more than five year’s time, Inferno’s has gone from a neighborhood lunch wagon to overtaking two major locations: Tsunami’s in Waikiki and The Lounge by Ala Moana Center.

“It’s the ideal arrangement for our customers because they can order drinks, enjoy some gourmet pizza and socialize in a nice setting,” says Okamoto.

Popular pies include classic Margherita Pizza ($16) with mozzarella, basil and tomato, as well as Truffle Pizza ($18, available at The Lounge only) made with mozzarella, onions, mushrooms and garlic drizzled with truffle oil. In addition to sourcing local ingredients whenever possible, the eatery also imports its tomatoes and Caputo flour from Italy.

For a bit of sweet and savory, Okamoto recommends Guava Pork Pizza ($19, available at The Lounge only). “We make our own homemade barbecue sauce, which we add to tender pieces of pork tenderloin.”
