A Festive Christmas Feast Awaits Diners

Situated just a fork’s throw away from picturesque Waikiki Beach, Bali Steak & Seafood brings together extraordinary culinary inspirations with a relaxing open-air atmosphere and award-winning service.

Located in the Hilton Hawaiian Village Waikiki Beach Resort’s Rainbow Tower, Bali Steak & Seafood serves up panoramic views of Diamond Head, the sparkling ocean and sandy beach below.

“The thing about Bali is that you get this amazing atmosphere; it’s one of the few restaurants that literally sits right on the water,” says Matt Alleshouse, chef de cuisine at the restaurant. “You can throw your fork and hit the ocean from the dining room.”

Just in time for the holidays, Bali Steak & Seafood is offering a special Christmas Eve and Day Four-Course Dinner available on Dec. 24 and 25 from 5:30 to 9 p.m. The special menu starts off with a choice of Kahuku Sweet Corn and Crab Chowder or Seared Diver Scallops, which are served with cauliflower puree, Hamakua mushroom soy bean succotash and white balsamic foam. Next, diners can select either Hirabara Spinach Salad, which features Shinsato Farms crispy “bacon bits,” figs, Surfing Goat Dairy feta cheese and a warm caramelized Maui onion dressing, or Waimea Mixed Greens.

“We offer what I like to call a Chef’s Tasting Menu, but it’s elevated in the fact that you get your choices from appetizers to entrees,” says Alleshouse when describing the four-course Christmas meal. “It’s a holiday themed menu with a little of our Bali Steak & Seafood island flair infused into it. I also like to focus on the winter aspect, and what’s available seasonally. It makes the process really fun.”

For the entree portion of the dinner, Chef Matt and his team prepare a choice of 10-ounce Filet Mignon, 12-ounce Prime New York Strip, 14-ounce Herb Salted Prime Rib, Volcano Island Honey Sesame Glazed Goose, Hawaiian Kampachi, or Miso Glazed Island Snapper served with caramelized shallots, mustard greens, black rice and a sesame Thai basil sauce. To complete the meal, diners are treated to Chocolate Peppermint Mousse Cake with spiked eggnog cream, Linzer candy cane cookie and raspberry coulis.

“You’re going to get some great island seafood in the snapper, some great steak choices done Bali style, and we use those seasonal vegetables to tie in the holiday flavors,” Alleshouse says. “Our pastry chef also came up with a killer chocolate mousse cake that just screams Christmas, so it completes the experience.”

Alleshouse introduced diners to a new Bali Steak & Seafood menu in early November with an emphasis on interactive dining with fresh, local produce and influences. Alleshouse and his team partnered with local vendors including Hirabara Farms, Hamakua Mushrooms, ‘Nalo Farms, Fresh Island Fish Co., Big Island Abalone and Kona Sea Salt.

Prime Porterhouse ($95) offers diners a 32-ounce cut of succulent beef seasoned with a special house blend of Kona sea salt, local herbs and spices. The Porterhouse and other entree selections can be paired with one of 12 homemade sauces, including Maui Onion, Malibu Black Rum BBQ and Tarragon Dijon Cream. Homemade butters also are available for $3 apiece, and include flavor profiles such as Gorgonzola & Kona Smoked Sea Salt and Roasted Garlic & Herbs that go perfectly with a moist, juicy steak.

“We really take to heart the local ingredients that we have available here in the Islands, and we’ve transitioned that into what I like to call a ‘guest interactive menu,'” Alleshouse says. “You make the choices, you set the experience. Here are all these fresh, local ingredients, and now, lets have some fun.”

Customers may enjoy a sampling of Alleshouse’s creations with the Chef’s Tasting menu ($68 per person), and are treated to Roasted Beet Salad, Sea Urchin Risotto, a choice of Miso Butter Glazed Monchong or Grilled Prime Fillet Mignon, and a decadent Waialua Chocolate Coffee Tart for dessert.

“We welcome you into our restaurant, but essentially, we’re welcoming you as our family into our home for the night,” Alleshouse says. “The service of being welcomed like that is second to none.”
