This week, Dining Out gets the inside scoops from Jade Dynasty’s general manager Gary Chan, who gives us a little taste of Jade Dynasty and shares just what fuels his culinary drive.

Training/education: 25 years in the restaurant industry
Who or what inspires you as a chef/manager/owner? I used to work at the Chinese restaurant inside Miramar Hotel, and the chef at that time was the No. 1 chef in Hong Kong. His cooking and management skills were good, and yet he remained very humble and friendly to everyone. He became my idol instantly.
If you could serve food to a celebrity, who would it be and why? What dish would you serve? The Secretary General of China. I think that’s a dream for all Chinese restaurant workers/owners. We did serve the Chief Administrator of Hong Kong at Jade Dynasty before.
What is your favorite dish on the menu? Why? Smoked Chicken with Chrysanthemum Flavor is my most favorite dish because the taste is so rich and distinctive. I never have experienced something similar to that in the Islands.
Is there a dish that you create that’s not on your menu, but available upon request? Crab with Mochi Rice in Lotus Leaf. It’s not on our regular menu, but if people request it, we can create it.
