This week, Dining Out gets the inside scoops from Golden Palace Restaurant manager Gary Lam, who gives us a little taste of Golden Palace and shares just what fuels his culinary drive.

Who or what inspires you as a chef/manager/owner? I have a strong background in customer service because I grew up with my parents and relatives owning businesses that centered around customer service in general. I would help out whenever I had free time. This in turn helped me build and strengthen my social and communication skills. At the restaurant, I meet a lot of new people and even learn new things from them. Friendships are developed along the way, and there’s no better feeling than to see customers leave happy with their dining experience and satisfied with their food.
What’s your most popular dish? We don’t have just one most popular dish, but a few of our all-time favorites are our Dim Sum, Chinese Chicken Salad with Jelly Fish, Minute Chicken Cake Noodle, and Steamed Sea Bass with Ginger and Onion.
Is there a dish that you create that’s not on your menu, but available upon request? Most times we are able to make just about any dish that the customers request even though it’s not on our menu. Even if we’re not able to make exactly what they are looking for, we will do our best to make it as close as possible and fulfill their needs.
What is the biggest compliment you’ve ever received as a chef/manager/owner? Besides the food here, your smile and personality keep us coming back.
What is an invaluable lesson you’ve learned while in the restaurant industry? From what I’ve learned over the years, the choice of what dish to order depends on several things. I usually talk to the customers and try to understand them, and also get a feel for what they are thinking and looking for. Then, I will make some suggestions based on my observations to help them choose a dish that they will be completely satisfied with.
