Truffled Heart of Palm

Guests at La Vie, meaning “the life” translated from the French language, can look forward to a refined, crafted and distinct experience featuring a modern approach to French cuisine complemented by an infusion of fresh, local ingredients by executive chef Shaymus Alwin and his team.

Situated on the eighth floor of the spectacular Ritz-Carlton Residences Waikiki Beach Ewa Tower, La Vie is open daily for breakfast and dinner service. The restaurant, which opened in August and features live piano entertainment nightly from 6 to 9 p.m., offers an inviting, spacious dining area and lounge flanked by a full bar, and opens up to a picturesque view of Waikiki Beach in the distance.

On the new Vegan Selections menu created by La Vie’s chef de cuisine Patrick Collins, the vegan concept works in tandem with the traditional menu by incorporating the same top-quality approach to preparation and quality ingredients. From the prix fixe menu, diners can choose to enjoy three selections for $79, or five choices for $119. To start off the meal, appetizers include: Sunchoke Tofu with baby spinach, mushroom poke, limu and inamona that combine for a distinct texture and taste; Beets & Avocado Pistou with raspberries, frisee and black sesame; and Carrot Tartare with ras el hanout (Moroccan spice blend), black olives and roasted eggplant crisps that are perfect when used to dip.

“Guests with dietary restrictions don’t feel like an afterthought,” says general manager Dusty Grable when detailing the vegan options. “If we can make sure all of our guests feel like we’re anticipating them, it adds to the experience.”

The robust vegan menu also includes: Cauliflower Veronique with fennel, green grapes and almonds; Truffled Heart of Palm with lentils du puy, asparagus and endive; and Abalone Mushroom with haricot vert, green garlic and potato Parisienne and a dusting of dried porcini mushrooms to round out the flavor profile.

For dessert, delve into Roasted Pineapple with dark chocolate sorbet, blackberry and cassis as well as Pumpkin Brulee with Asian pear and macadamia nuts.
