Pastry chef Nixon Dabalos started Madcakez as one-person custom-cake operation, which has grown into a bakeshop. It continues to sell these imaginative custom cakes, as well as locally inspired pastries.

A graduate of Gros Bonnet Culinary Academy, Dabalos has many years of experience in the food industry. Inspired by his three daughters and their love of cake, he meshed his creativity and culinary experience together to establish Madcakez.

“With the support of my friends and family, I have been able to see my dream of owning my own bake-shop come to life,” Dabalos shares.

Whether it’s for a wedding, birthday, retirement, anniversary or any other special moment in life, Dabalos has something artistic and flavorful to offer.

On a daily basis, the shop has a wide variety of pastries and deserts to satisfy all palates.

Some of the best sellers at the shop are the colorful Crinkle Puffs ($2.75 each). The soft, fluffy cream puffs are topped with a crinkle shortbread cookie. They are stuffed with delicious fillings such as ube Chantilly, green tea Chantilly and guava Chantilly.

Another exquisite item at Madcakez is the Ube and Original Brazo de Mercedes ($2.50 each). This treat consists of a soft flourless cake filled with creamy custard.

Dabalos said classes are also being offered inside the bakeshop to anyone who might want to learn how to create their own delectable sweets.
