Chef Russell Siu
Growing up in Hawaii, I have been very fortunate... from being raised in Kalihi Valley to traveling the world, through my work I have been able to experience many different cultures and cuisines. Bringing home what I have learned I was able to fuse some of those gourmet twists into Hawaii’s local plates. With the concept of healthy eating options, using local products, preparing in-house menu items & bringing local favorites with a gourmet twist to all.
Chef de Cuisine Patrick Collins
Patrick Collins was born in Ventura, California and moved to Europe during his formative years from ages 10-18. A graduate of the Culinary Institute of America, Collins spent 12 years cooking in New York City cooking in some of the best kitchens in the city, including Allen and Delancey and the Dutch. In 2016, Collins moved to Honolulu to start a family and joined the opening team at Senia.
Assistant General Manager Jonah Galase
Born and raised in Honolulu, Jonah Galase graduated from University High School. During his time at the Hawaii Public Library System, Jonah found a passion for food and beverage and applied for his very first service staff position at Hy's Steak House. Jonah flourished at Hy's and after 16 years, he now presides as the Assistant General Manager.
Owner Danny Kaaialii
Danny Kaaialii is a Hawaiian restauranteur based in Honolulu, Hawaii. Currently owner and operator of Encore Saloon, The Daley Burger and Pizza Mamo, he started his restaurant ownership with local favorites Salt, in Kaimuki, and Cocina in Kaka`ako, now both closed. Danny’s food and beverage experience ranges from farmer’s market stands to fine dining and he takes exceptional interest in mezcal, wine, and whiskey. Danny enjoys spending time with his family, surfing and traveling.
Owner Robert Yamazaki
Owner Matt Resich
Over 15 years of experience in the hospitality industry taught Matthew that food borne of passion just tastes better. So he took his passion, and his business partner, and flew to Naples, Italy, in 2015 to become an official pizzaiolo (pizza guy). He honed his napoletana-making skills studying under renowned master pizzaiolo Enzo Coccia, one of the founding members of Associazione Vera Pizza Napoletana. His passion for pizza inspired him to open Brick Fire Tavern with partner Inthira Marks in 2016. Since then, Brick Fire Tavern has expanded into the Kaimuki neighborhood of Honolulu.
Chef Jonathan Mizukami
Born and raised on Maui, Mizukami is a graduate of the University of Hawaii - Maui College, Culinary Academy in Culinary Arts and Baking. He began his culinary career working at the former Roy’s Nicolina on Maui and Alan Wong’s namesake restaurant in Honolulu. He also served as the executive chef of Vintage Cave and chef de cuisine at Chef Mavro’s in Honolulu before joining The Kahala Hotel & Resort.
