      HAPPY
                                                                                       POKE-CHOS!
Ingredients:
- 1 pkg Sun Noodle Wonton-Pi Wrappers, cut into triangles - 1 lbs. Fresh Poke
- 1 cup Cilantro, chopped
- 1 cup Green Onion, chopped
- Unagi Sauce, to taste
- Spicy Mayo, to taste
- Inamona, optional
- Neutral Oil (for frying)
Directions:
1. Fill a large pot with a couple inches of oil and place over medium heat. When the oil starts to shimmer, test the oil with one of the Wonton-Pi. It should fry in 30 seconds; 15 seconds on each side. Fry the rest of the wrappers, flipping halfway through then set aside the fried wonton ‘chips’ to drain and cool.
2. While the chips cool, chop the Poke so it is a quarter of the original size.
Assembly:
1. Lay chips evenly across a large platter or foil serving tray. Spread Poke in small scoops over the chips, then drizzle equal parts Unagi Sauce and Spicy Mayo and garnish with Cilantro and Green Onion. Optional, add a few pinches of Inamona as an additional garnish.
Pro Tip:
To avoid large air bubbles in the fried chips, poke the center of the wrappers with a sharp knife before frying.
