Sumo Roll

When you walk into Kaku’s Sushi and Seafood Buffet at International Market Place, you might notice a small sign near the entrance. It reads “Kaku’s mission statement,” and lists such items as “serving good food with the highest ingredients possible,” “providing the best service,” and “providing a safe environment by keeping a clean kitchen and well-maintained, beautiful dining area.”

Cucumber Roll

These high standards should come as no surprise once you realize Kaku’s is the brainchild of chef Kaku Makino, founder of Todai, an upscale chain that once boasted more than 30 locations all over the world. He entered the culinary industry at the age of 20 by launching a bento business in Tokyo, Japan. For 40 years, Makino dedicated himself to perfecting to the art of the sushi buffet. His goal is to serve guests as much delicious, quality food as they can eat.

Assorted Sushi

The sushi offerings include such delightful concoctions as the Sumo Roll, which uses thinly sliced daikon in place of nori and features salmon, ebi, lettuce, cucumber and wasabi aioli. The Cucumber Roll also dispenses with the nori (as well as rice) and uses thin cucumber slices to wrap crab, tuna and shrimp served with an Sriracha aioli.

Other sushi options include the Eel Roll with eel, cucumber and crab, the Kahala Roll with crab, avocado and cream cheese, and the Diamond Head Roll with spicy crab, tuna, shrimp tempura and avocado.

Snow Crab Legs

Among the non-sushi options offered in the dinner buffet include Snow Crab Legs, Miso Fish, Ribeye Steak, Roast Beef and more.

Kaku’s Sushi & Seafood Buffet seats 100 inside and another 100 outside. During lunch (11:30 a.m.-2 p.m.) the all-you-can-eat buffet is $25 per person, and for dinner (5:50-9:30 p.m.) it is $50 per person. Local residents enjoy a significant kamaaina discount.

JAMMIN’ ON SALMON

Looking to load up on your omega-3 fatty acids? Try the Salmon Lover’s Roll at Kaku’s Sushi & Seafood Buffet. Salmon, salmon roe, onion and avocado combine with cream cheese for a rich, satisfying blend of flavors. Other salmon options include the Spicy Salmon Roll featuring salmon mixed with a spicy sauce.
