Nestled in the lush surroundings of Manoa Valley sits Fendu Boulangerie, a little bakery showcasing big flavors — with freshly baked breads, gourmet pizzas and sandwiches, and an array of beautifully crafted desserts that feature chef and owner Niel Koep’s elegant skills in creating European-inspired delights.

Walking into the sweet and petite bakery, you are greeted by aromas of freshly baked goods — and by a friendly staff waiting to help you with your order.

From a daily bread menu, featuring popular selections like miche loaves, or Koep’s favorite buckwheat fig bread (served on Sundays), to delectable treats like Lychee Streusel Danish and Valrhona Dark Chocolate Dome with Grand Marnier Creme Brulee — patrons are welcomed to an array of treats.

Everything is made in house, mentions Koep. The bakery is known for serving 100 percent all-natural ingredients with no added chemicals and no hydrogenated oils. What’s more, the European-style bakery is in its ninth year of rolling out breads, pastries and more to local residents.

MAIN SQUEEZE

Bright, citrusy calamansi juice, courtesy of the owner’s sister’s home on Lanai, adds just the right amount of tart and sweetness to the filling.

LAY ON THE CARAMEL

Once the warm filling cools, a creamy caramel jelly finishes off the baked good, adding just a touch more of sweetness.

THE UPPER ‘CRUST’

The handcrafted French pie dough creates a delicate, flaky crust that sets the stage for the pastry, holding together the thick filling.
