Just as he’s always doing at Sarento’s at the Top of the Ilikai, executive chef Edmond Kwok cooks up an elegant, fresh and unbelievably flavorful menu item in Fresh Catch of the Day ($36).Juicy and tender mahi mahi is presented with red chard sauteed with garlic, chili flakes and crispy pancetta. The dish is served with squid-ink gnocchi, Parmesan and ricotta cheeses, herb garlic and brown butter sage. To top it all off, the chef adds a shishito pepper, fried sage leaves and micro greens.
