Got sushi on the brain? Genki Sushi has you covered. And, with more than 13 locations across the island and 200 different items on the menu, the popular chain offers so much more than its name implies.

“We take a lot of pride in the dishes we put out, and a big part of that is creativity,” says director of purchasing David Moon. “Every Genki location exercises freedom to create special dishes based on what we know the local customers will enjoy.”

Case in point, Genki’s Bacon Baked Mussels ($3.80), currently only available at the restaurant’s Aina Haina location, has been on the receiving end of much attention and praise from both locals and visitors alike. The dish, which features three cooked mussels smothered in a homemade sauce of bacon and garlic mayonnaise, offers the ideal seafood complement for lunch or dinner.

Another consistently popular dish, Chicken Wings ($3.80), come with four to five generous pieces of tender meat cooked until golden brown. A dish that never goes out of style, the wings are perfect for sharing, and offer a refreshing source of protein.

No matter what specials are on deck, menu staples including Ahi Poke ($2.80) continue to increase in popularity as time goes on. “Our ahi poke recipe is popular because it’s refreshingly simple, using little more than fresh limu, Hawaiian salt and sesame oil,” says Moon. “The key to our success has always been using quality ingredients modestly, so each component speaks for itself and adds dimension to the dish.”
