TAKE A CLOSER LOOK AT THIS WEEK’S HOUSE SPECIAL: VALRHONA CHOCOLATE DOME ($5.75)

Fendu Boulangerie in Manoa Marketplace breaks the mold when it comes to sweet nothings. Owner and chef Niel Koep opened this top-tier bakery in March 2009 determined to offer quality baked goods and sinfully delicious desserts to his patrons.

Fast-forward to today, and Fendu Boulangerie continues to enjoy nothing but sweet success, thanks to Koep’s determination and drive, and his decision to bake with only the best ingredients possible. According to Koep, “all-natural” is the only way to go. Enter into the quaint bakery and let your eyes linger and sweet tooth take hold of Fendu’s divine masterpieces.

“My goal was to create a chocolate dessert with a variety of elements for the palate,” says owner and chef Niel Koep. “I made sure that it wasn’t too rich to the point where customers wouldn’t be able to eat the whole thing.” Indeed, this is a dessert worth indulging in to your heart’s content.

The outer layer is composed of light chocolate mousse made with Valrhona Manjari Dark Chocolate, which chocolate aficionados often go gaga over.

This piece of chocolate decadence is enhanced with a shiny dark chocolate glaze and garnished with coco nibs, gold leaf (edible gold that is pounded very thin) and a chard of Manjari Chocolate.

Bite into the dome, where the Grand Marnier Creme Brulee rests atop chocolate chunk and macadamia nut sponge cake.

The base of Valrhona Chocolate Dome is a thin Dutch-style chocolate cookie baked to a beautiful crisp. Its crisp texture blends nicely with the smooth consistency of the chocolate and creme brulee.
