Ever wonder what goes on behind the scenes at your favorite restaurant? Well, much credit goes to the many chefs, owners and managers who work diligently day in and day out to make sure Hawaii’s diners have a top-notch dining experience.
This week, Dining Out gets the inside scoop from L&L Hawaiian Barbecue owner and chef Wesley Fong Wu, who gives us a little taste of Healthy Garlic Shrimp and shares just what fuels his culinary drive.

Who or what inspires you as a chef/manager/owner? I was in New York when my cousin Peter Dong, who’s also an L&L Franchisee, said that L&L is very famous in Hawaii and that I should join him. So, I started at the Haleiwa store in 1994, and now I own four locations on the Big Island.
If you could serve food to a celebrity, who would it be and why? What dish would you serve? I would like to have Anthony Bourdain try the authentic L&L Hawaiian Barbecue plate lunch because he is famous for trying different food around the world. L&L can be found around the world, but started right here in Hawaii. I would gladly serve him anything on our menu!
What is your favorite dish on the menu? Why? My favorite dish on the menu is our Healthy Garlic Shrimp plate. I enjoy any kind of seafood and this dish is tasty.
Is there a dish that you create that’s not on your menu, but available upon request? I have a lot of locals come in and request all kinds of dishes. One of the most popular requests is for Oxtail Soup, so we serve that on certain days.
